Creamy Coconut Fruit Dip


This week I've had the MOTHER of all colds.  I can't currently speak, smell, or taste, which is great except for when I want to eat, communicate, or check whether or not I actually washed the clothes in the washer.  My kids told me my birthday cake and cupcakes were super good so I mean, who really needs to be able to taste anyways?

I spent most of yesterday reading Matched, which was great, except there are 3 people in line ahead of me for Crossed and like, not to be rude, but I really need to know what happens and if I can read a whole book in one day, you should be able to too.  Unfortunately, other people apparently have lives?

I bought a flat of strawberries at Costco last week so my kids aren't even starving.

That of course brings us to fruit dip.  This stuff is amazing on bananas.  It tastes like cream pie, and I'm hoping it's an appropriate substitute for children to have for lunch.

This girl ain't winning mommy of the year award today.

Caramel Cinnamon Fruit Dip with Bone dippers

Oh look.  Another belated Halloween recipe.  Don't hate me.

This dip is insane.  It looks like it doesn't make a lot.  But it is RICH and it is SWEET.   You'll probably want to throw a few apples in with the bones to dip just so you don't go into sugar shock.  But this is fan. tastic.  Truly.  I like to pretend think I am a pretty disciplined person but I can't stay away from this.

The original recipe calls for Heath bar/toffee add-ins.  I know this sounds delicious but I just couldn't dig it.  The texture without it is wonderful, and the nuttiness it adds just doesn't work. That being said... you can try it if you want.

PS- You can really eat this any time of year.  You might just have a hard time explaining to guests why you're serving them bone-shaped snacks.

Tim's Bacon Cheddar Ranch Cheese Ball

In honor of Tim's obsession with cheese balls...

-2 (8 oz.) pkgs. cream cheese, softened
-1 pkg. ranch dressing mix
-2 1/2 cups shredded cheddar cheese
-1 1/2 cups chopped pecans
-1-2 Tbs. Hormel "Real Bacon" Bacon Bits (I'm not entirely sure on the exact measurement... I just kind of eyeball it... it really depends on how much you like bacon)

In a medium bowl, mash cream cheese. Mix dressing mix, cheddar cheese, and bacon bits into the cream cheese. Shape into a ball. Roll the ball in chopped nuts. Refrigerate covered. Serve with crackers. (Wheat thins are best!)
