One Christmas while I was in college my family went to New York City. On that trip I won second row tickets to Wicked which was just getting popular. Idina Menzel completely blew me away. I think I actually stopped breathing for a few minutes because I was so amazed by her. I will never forget that show.
It was a fantastic trip, but I have one regret. I Dip It In Chocolatehttp://www.blogger.com/profile/10177255385115716352noreply@blogger.com2tag:blogger.com,1999:blog-292879106065055612.post-17369400469626831352014-10-25T07:00:00.000-06:002014-10-25T07:00:00.826-06:00Fluffy Vanilla Frosting
I just posted my basic buttercream recipe and though these recipes are very similar, I use both of them for different things, so I think they each deserve their own spot in the limelight.
This one is fluffier and lighter due to the long whipping time. It takes a little longer to make but makes a smoother, lighter, buttercream. I like it better for frosting cupcakes.

I like to make birthdays a big deal at our house. I used to do elaborate cakes that literally took days to make. We're talking a life-sized guitar cake, a firetruck with a burning building that actually smoked, cakes that hung from the ceiling... INSANITY, my friends.
While I still love to make crazy cakes, they were taking so.much.time. And one day it occurred toDip It In Chocolatehttp://www.blogger.com/profile/10177255385115716352noreply@blogger.com1tag:blogger.com,1999:blog-292879106065055612.post-47354663702922102642014-10-23T07:00:00.000-06:002014-10-24T16:52:55.638-06:00Mint Oreo Brownies
I went to BYU, home of the mint brownie, so really this recipe was inevitable. They don't completely replicate the brownies that sustained me through 4 years of college but they have Oreos and hot fudge so what more can I ask? These are a must-make!

This summer we took our kids to a dairy farm in Idaho called Reed's Dairy. It really is a farm.. tons of cows, pigs, sheep, goats, kittens running around.. And right in the middle of all that is a little shop with some of the creamiest ice cream I've ever had, and the best chocolate milk in all the land. It's a weird experience- going to a place that smells like cows and Dip It In Chocolatehttp://www.blogger.com/profile/10177255385115716352noreply@blogger.com0tag:blogger.com,1999:blog-292879106065055612.post-77828296799268683522014-09-27T19:56:00.001-06:002019-02-02T10:12:03.402-07:00Mint Oreo Cookie Ice Cream

This is the best thing I ate this summer. No competition.
Caramel flavored ice cream with brownie chunks. (Droool.) You can just use leftover brownies or you can try something like Flipz instead if you don't want to bother making brownies.
Seriously, if you make one more ice cream recipe this year, please make it this one!

This summer we introduced our kids to 'The Sandlot'.
(It was all fun and games until my 6 year old played catcher on his T-ball team and started taunting the batters. Thank you Ham..)
On the 4th of July we went to the city park and they played 'America the Beautiful' by Ray Charles as the fireworks went off.
Magical Sandlot moment.

I can't believe how long I have been absent from blogging. Every day I think I need to edit some pictures or write a post but the pictures and recipes just keep piling up.
It was a crazy but wonderful summer. My kids were in school until JULY (year-round school), and we did a lot of traveling. I am slightly obsessed with my ice cream maker. In the summer I buy the huge half-gallon of heavy cream at Costco, and it all gets turned into cold, creamy, goodness. Homemade ice cream just tastes so much better than store-bought and even better- you can control what goes into it. When I make Cookies & Cream ice cream for example, I like to put in an entire package of Oreos.

It's really a shame that these cupcakes are so homely because they're some of the best I've ever made.
Moist banana cake, Brown Sugar Cinnamon frosting, and Rum caramel sauce.
A perfect, magical combination! Make sure to use fresh brown sugar, and whip it long enough, so your frosting isn't gritty.
The Rum Caramel Sauce can be made up to a week ahead of time to save time. Has everyone been glued to the Olympics these past few days? I think they're the only thing getting me through this terrible Winter. We still have at least 6 weeks of probable snow left and I can't remember ever feeling so stir-crazy for so long. I feel especially bad for my kids being cooped up. I mean in winter at least I can still do my favorite activities. My six year old is upset this week about a certain shape. A heart to be exact.
According to him, it looks nothing like an actual "heart", which has ventricles, arteries, and connective tissue.
Personally, I'm fine with a symbol of love that doesn't include graphic diagrams of my insides, but apparently I'm the crazy one.

I'm not usually a big fan of Red Hots. I'm kind of a wuss in that way. But I do love them in other treats. If you've never tried putting them in ice cream for example, I totally recommend it. When they're combined with other ingredients they mellow out and transform into something perfectly sweet and cinnamony. I love February because pink is everywhere. After 4 months of winter it's just a nice little reminder that the world is not all drab and gray. This raspberry cheesecake ice cream is probably totally inappropriate for a day with a 20 degree high, but it's so pretty I don't even care. I'm pretty proud of this one. For a super cheesecakey flavor, I added cream cheese andDip It In Chocolatehttp://www.blogger.com/profile/10177255385115716352noreply@blogger.com2tag:blogger.com,1999:blog-292879106065055612.post-6167192731549094532014-02-02T18:58:00.001-07:002014-02-02T21:34:34.143-07:00Dark Chocolate Donuts
Does anybody even care that it's Groundhog's day? Why are we not all celebrating by eating hot dogs? Did everyone realize without me that ground hog is actually disgusting?
Or am I supposed to be watching the Superbowl? I might be from Colorado but the second grade bully used to wear Bronco's jerseys basically every day so they've been my nemesis for awhile now. Happy February! This might be the first year ever I am ahead of the game and ready to post holiday treats before said holiday actually occurs.
Ok, actually these are from Christmas, but whatever.
Pretend I'm cool.
These cherries are so pretty but they're kind of a pain in the butt to make. Just being honest there.

For Christmas this year we surprised our kids and drove to Colorado to visit my parents. I thought for sure my 6 year old would figure it out because he's pretty knowledgeable about geography and he can read, so I figured once we hit Denver and signs started popping up all bets were off. Who needs store-bought candy when you can make your own?
Just kidding. I'll take a box of See's chocolate any day.
Rum raisin please.
But sometimes it is fun to make your own- especially for Valentine's day or Christmas. For this recipe you will need a strong stirring arm (be ready to stir for half an hour or so) and an uninterrupted period of time. Nothing says Christmas like sugar cookies, right? I've posted this sugar cookie recipe before, but I wanted to share these ones all decked out for Christmas.
It completely frustrates me when I see piped cookies online but there's no information on what tips were used.
I'm not a tip aficionado. I can't just look at a design and know which tip created it. Although I haven't blogged for awhile, I did do some baking around the holidays and I took photos so I could post them someday. These Krispy Treats were one of my favorite new recipes of the season. Inspired by the Peppermint JoJo's at Trader Joes, they are the perfect holiday treat. Super fast and simple enough that your kids can help you make them.

Sometimes I make recipes and then post them two months later.
Honestly, it has been a busy few months and I needed a break to reevaluate my priorities and how I was allocating my time. I feel like my kids will only be little for so long, and I don't want them to look back and remember me as always being in the kitchen and on the computer or constantly fending them off from treats that Dip It In Chocolatehttp://www.blogger.com/profile/10177255385115716352noreply@blogger.com2tag:blogger.com,1999:blog-292879106065055612.post-2183221922932808912013-11-25T07:00:00.000-07:002013-12-19T09:47:20.710-07:00Maple Pecan Cinnamon Rolls
Some days I fail at life. Last month Chase missed half his school Halloween party because he's on a year-round system and I forgot his track was on an early out schedule for the day.
Never mind that the rest of the school and all of the buses were on a regular schedule for the day. (What!?)
This post is kind of like that. Oops. Sometimes I find pictures I took a few weeks a year ago and forgot to post. This marriage of chocolate and coconut cream pies comes from Dorothy at Crazy for Crust, and was a big hit at our Thanksgiving table last year.

I may have to rename November "the season of brown". I just noticed everything I've posted lately is BROWN. It is the curse of Fall baking. Usually I try to stagger my posts so that colors are equally distributed on the picture bar at the top of my blog, (I totally have problems), but this month is seems like everything I have is brown.
