Oreo-Stuffed Chocolate-Dipped Marshmallows on a Stick (w a S'more variation)

That's right.  It's a stuffed marshmallow on a stick.  Dipped in chocolate.  I'm still trying to figure out how it took me this long to think of these.  Is it normal to dream up recipes in your sleep?  I totally dreamed up this recipe in my sleep.


Stuffed Chocolate-Dipped Marshmallows on a Stick

-Jumbo campfire marshmallows
-Wooden popsicle sticks
-High quality solid milk chocolate bar, like Lindt (not the kind with creamy filling).  A 4 oz bar will cover about 4 of these jumbo pops

Plus your filling ingredients:
-Crushed Oreos for an Oreo stuffed variation
or
-Honey Graham goldfish for a S'more variation
-Crushed graham cracker crumbs for sprinkling

First, set out all your jumbo mallows and cut a conical hole in the top.  If you have stuffed cupcakes before, it's the same method.  Basically just use a sharp knife to cut up a chunk of mallow and set it aside.  Cut the pointy part off the end so you just have a little round piece left to use as the "stopper". Look at my mallow on the right if you're confused:
Next stuff those babies.  Add crushed Oreos for an Oreo variation.
When it's filled, put the little mallow stopper back on top and push it down gently.  You want it to stick to the big mallow pretty good, so you can also use a pastry brush to brush a teensy bit of water on your stopper before putting it together to make it stick together nice and tight.
If you are doing the S'more variation, just stuff some of your mini goldfish in there and put the top back on. Even though you will want to over-stuff with these, Don't.
Chop your chocolate bar roughly.  Then melt in a small bowl in the microwave at 50% power, stirring every 30 seconds until melted.  Do not overheat.  It will probably take about a minute and a half to melt completely.

Dip each popsicle stick into a little bit of chocolate and insert one into the bottom of each stuffed mallow.  You may hit some of your stuffing but don't worry about it; just try to wedge the stick in there nice and good, and hold the top down tightly while you push. Place pops on a parchment lined cookie sheet and freeze for 20 minutes.

Remove your pops from the freezer and allow them to sit for a couple minutes. (You don't want them to be too cold, or the chocolate will freeze to them immediately and you won't get a smooth chocolate coat). Re-melt your dipping chocolate for about 30 seconds in the microwave at 50% power if it has thickened at all.

Carefully spoon chocolate over all sides of your marshmallow pop and allow excess to drip off. This can be a bit tricky since you can't really turn the pops upside down without the stuffing falling out, but stick with it. They won't turn out perfectly, but they will be yummy, so don't worry about it.  Just get some chocolate on there. After dipping, place each pop back on the parchment lined sheet, and sprinkle with toppings if desired.  Move to freezer for 10-15 minutes or until set.
You can store these in the refrigerator in an airtight container, and eat cold or bring to room temperature before serving.
I found I liked the S'more variation better than the Oreo.  I had a hard time tasting the Oreo, even with all that stuffed goodness inside.  Personally I'm kicking myself in the butt for not trying a Reeses-stuffed mallow.  Seriously.  How good does that sound? Feel free to try it and let me know!

I love your post. I had a bag of the jumbo marshmallows in my cupboard for about a month, and I couldn't think of how to use them. I finally just dipped them in white chocolate and sprinkles for the 4th of July. They were ok, but yours are really something special, and very creative. I HAVE to try both variations to see which I like better. Oh, who am I kidding, they both look fantastic. I know I will like them both. Thanks!
