Caramel Brownie Ice Cream


This is the best thing I ate this summer.  No competition.

Caramel flavored ice cream with brownie chunks. (Droool.) You can just use leftover brownies or you can try something like Flipz instead if you don't want to bother making brownies.

Seriously, if you make one more ice cream recipe this year, please make it this one!




Caramel Brownie Ice Cream
  
-2 cups heavy cream (divided)
-1 cup thick caramel sauce (Homemade, or Mrs. Richardson's is great)
-pinch of salt
-1 cup whole milk
-2 tsp vanilla
-4 cups chopped brownie chunks (I used Ghiradelli triple chocolate from a box. Only use the soft parts!)

Combine 1 cup of cream, caramel sauce, and salt in a saucepan over medium heat.  Whisk until well combined.  Remove from heat. Stir in second cup of cream, milk, and vanilla. Cover mixture well and refrigerate overnight. 
 
Freeze ice cream in an ice cream maker according to manufacturer's directions.  I use an electric and it takes about 30 minutes.  When done, scoop ice cream into a covered freezer-safe container and fold in browie pieces. 
 
Freeze several hours or overnight before serving. The brownies soften the longer this freezes so I think it's even better after a few days.
