Pink Peppermint Oreo Ice Cream Sandwiches


These little peppermint Oreo ice cream sandwiches were my favorite new creation of the Christmas season.  They are SO good. 

Chocolatey.  Pepperminty.  Cool, creamy, and delicious.  

Plus they're bite-sized little babies, so obviously they're low-cal...

Right?

-Oreo's
-Dreyer's Peppermint Ice Cream
-Magic shell, ice cream topping


Remove ice cream from freezer to soften for about 15 minutes.

Twist each Oreo open and scrape out the filling.  Put a scoop of softened ice cream in between the two cookies.  Press down gently and use a butter knife to wipe off the excess ice cream that will squeeze out.  If you start with a lot of ice cream you can get pretty smooth sides and still have ice cream left inside.

Put filled Oreo in freezer and repeat with as many Oreo's as desired.

Allow ice cream-filled cookies to set 6 hours, or overnight.  Longer is better.  Be sure to cover them with something so they don't pick up "freezer-taste".

Remove cookies from freezer.  Hold one Oreo on a chocolate dipping fork over a bowl.  Pour magic shell evenly on top and tap fork against the side of the bowl gently to even out the chocolate and get a nice smooth top.  Allow excess chocolate to drip off, then place on a parchment-lined cookie sheet and move back to the freezer.

Repeat for each Oreo.

Freeze at least 2 hours before serving.  If you don't serve immediately, take the cookies out and wrap them up individually in foil to keep them fresh.
