Marshmallow Oreo Bars


Cookies.  Marshmallows.  Butter.

Magic I tell you.

Marshmallow Oreo Bars
Recipe slightly adapted from Picky Palate

-1 pkg Oreos (16 oz.)
-1 10 oz. bag mini marshmallows
-4 Tbsp butter

Line an 8x8 baking dish with tin foil and spray with Pam.

Break each cookie in half and put in a food processor.  Pulse 3 or 4 times.  You just want to break the cookies up a bit, not grind them into powder.  Large chunks are good.  Pour into a large bowl.

Melt butter in saucepan over medium heat. Add marshmallows and stir just until marshmallows are nearly melted.  Take off heat immediately and pour into bowl with Oreos.  Stir quickly until combined.

Press very firmly into prepared pan.  Allow to cool 20 minutes or so.

Remove bars from pan by pulling the edges of the foil out of pan.

Peel foil down from all sides and use a sharp knife to cut into squares.  Store in airtight container.
